Manifest was opened by chef patron Paul Durand and his wife and business partner Charlotte Jones in Liverpool in 2022. You'll find it nestled on a side street in a historical warehouse building where Manifest brings the history and modern vibrancy of the creative and foodie hotspot, the Baltic Triangle, to life.
Inspired by Paul's travels in European cities such as Bologna and Bordeaux and their thriving, casual dining scenes, Manifest represents a combination of a relaxed continental flow and a modern fine dining experience, showcasing the best local produce native to Merseyside and the North of England. Indeed, this elegant industrial-style restaurant and bar has brought a new style of dining to the Liverpool food scene.
Paul and Charlotte recognised there was a gap in Liverpool eating-out that they wanted to fill, and the restaurant's personality and sincerity has earned it many loyal fans. Manifest is a restaurant 'made for Liverpool' reflecting the city's musical and cultural scenes, which Paul describes as being a 'big adult playground with the UK's second biggest night-time economy' and proving that there are good restaurants outside the UK's Capital.
The result is a small, intimate restaurant and bar offering casual fine dining with food and wine of equal importance, with the open kitchen as a focal point. The interactive experience is designed so that guests can have a conversation with every member of the team during the meal. "We had a lot of time during the Covid pandemic to think about what we wanted to offer when we opened our next restaurant, and we felt that we wanted to bring the human connection back to hospitality," says Paul.
